MACA (Lepidium meyenii)
Maca is a traditional food cultivated at the upper altitude of 4400 meters only in the Central Peruvian Andes.
It is believed to possess fertility-enhancing properties, act as an energizer and antistress agent, improves physical and mental capacities, strengthens sexual stamina, and enhances the immune system.
Maca is a rich source of protein and vitamins with high content of essential amino acids and minerals.

Yacon (Smallanthus sonchifolius)
Yacon plant is originate from temperate Andean valleys of South America where is
cultivated until altitudes near to 3500 meters. It sweet and low in calories roots
are considered "fruit" by Andean people who eat it raw, but also they
consider it medicine to lower blood sugar in diabetes and improve digestion.
It sweet flavor is due it contains sweet-tasting oligo-fructans which is not
metabolized by the digestive track.
Local folk medicine also believe that the Yacon leaf can help to cure
hypoglycemia, they
boil it and prepare medicinal tea to cure this disease.

OCA (Oxalis tuberosa)
Oca tubers are traditionally cultivated in the Andes from ancient times before
the Inkas it was a major Andean staple in pre- Colombian times, second in importance to
potato. To improve its sweet flavor and culinary quality, harvested oca is typically exposed to direct sunlight
for several days prior to consumption. Oca is eaten
boiled, baked, roasted, in soups or in stews, and it is often fed to children. Local people
do it dehydrates and kept for long periods of time as "caya," which is flour made from this sun-dried tuber.

MASHUA (Tropaeolum tuberosum)
Mashua is used for food and in folk medicine from ancient times in the Andes it is cultivated at elevations of 2500 to 4000 m.a.s.l.
as it is one of the highest yielding, easiest to grow, and the most frost resistant. Andean
people does eat Mashua tubers boiled, baked, roasted, in soups, in stews
or soaked in molasses and honey and eaten as sweets, the nutritional value of mashua is high. Mashua leaf and flowers are been eaten also boiled and baked. In folk medicine
it is used to treat liver and kidney problems, as emmenagogues and
antiaphrodisiac.

OLLUCO (Ullucus tuberosus)
Olluco is one of the most
important tuber crops in the Andean where it has been cultivated from
Pre-Inkas times between 1,000 and 4,000 m.a.s.l.. Cooked tubers and leaf are used in several
dishes as soups and stews. Olluco tubers and leaf are rich in calcium,
vitamin C, carotene and protein. Regional people believe that an spoonful of cooked leaves can provide

QUINUA (Chenopodium quinoa Willdenow)
Quinua was domesticated
about 3,000 years ago by the ancient Andean people and was the favorite food
of the Inkas. Unlike cereals, quinua does not contain gluten and
cholesterol, and compared to other grains and vegetables, it is high in protein, calcium, and iron.
The United Nations Food and Agriculture Organization (FAO) considers quinua "the perfect
food" and the U.S. space agency, NASA, are including quinua in the basic diet of its astronauts.
