Oca tubers are  traditionally cultivated in the Andes from ancient times before the Inkas it was a major Andean staple in pre- Colombian times, second in importance to potato.
To improve its sweet flavor and culinary quality, harvested oca is typically exposed to direct sunlight for several days prior to consumption.
Oca is eaten boiled, baked, roasted, in soups or in stews, and  it is often fed to children.
Local people do it dehydrates and kept for long periods of time as "caya," which is flour made from this sun-dried tuber.
